As the hotel’s signature dish, Regent Taipei’s beef noodle has not only won two championships at the 8th Taipei International Beef Noodle Festival in 2012, but it was also featured by CNN as one of the best beef noodles in Taipei, attracting a steady stream of international visitors.
This Champion Clear Beef Noodle starts with the searing of beef bones, beef shank, green onions, ginger, and onions to release their aromas. The ingredients are then simmered. To avoid an overly greasy broth, the ingredients are rinsed with clean water after searing, removing the dark colour and excess oil, which helps maintain a clear soup. After simmering, the beef shank is further cooked in broth to ensure it is flavourful, and sliced against the grain to maintain a tender texture.
