The Japanese cuisine at Aqua continues to be guided by Executive Chef Iwahashi Tatsuya, while the Italian kitchen is taking an exciting new direction under the stewardship of Executive Chef Ilaria Zamperlin, who has relocated from Dubai and is Aqua’s first female chef.
The highlights of Chef Ilaria’s collection on the a la carte menu includes the Sicilian red prawn carpaccio with sea urchin, egg yolk emulsion, basil oil, and crunchy capers; the Tortelli alla Norma with eggplant, aged ricotta sauce, confit date tomatoes, and basil; the Champagne and lobster bisque risotto with red prawns, scallop, baby squid, black ink, and parsley; and the Dover sole mugnaia style, with carrot puree, crispy leeks, lemon, and caper sauce.
In the Japanese kitchen, Chef Iwahashi continues to offer innovative seafood dishes, such as the seared squid tempura roll; the mouth-watering salmon, yellowtail, tuna, and cream cheese roll with caviar; and the Japanese-style Isoyaki abalone with turnip, sea grape and tiger prawns.
