Freshness, umami, the fifth taste beyond sweet, sour, bitter, and salty is present in all fresh ingredients, such as foie gras, truffles, caviar, fresh seafood, as well as common vegetables like mushrooms, tomatoes, potatoes, and corn.

Freshness, a palate filled with a taste map, from Xiamen to Nanjing, Chaozhou, and Zhangzhou, experiencing the flavours from rivers, lakes, and plains, akin to exploring the culinary heritage of Minnan cuisine.

Located on Huandao Road, Jali Seafood Restaurant boasts an unparalleled dining environment. The main dining area situated above the ground floor features balconies and private sea views, allowing guests to leisurely enjoy a feast of lobster, abalone, and seafood while facing the sea. Inside the private dining rooms, there are tea tables for guests to brew tea, accompanied by chef’s specially made crispy salted sticks.

驰名海山骨 Famous Pork Spare Ribs (Sliced)

Established in 1983, the restaurant never fails to captivate the taste buds of diners. At the entrance on the ground floor, there is a spacious seafood area offering a variety of shellfish, crabs, fish, and more, all fresh and lively for selection. The Famous Pork Spare Ribs dish features a perfect balance of fat and lean meat. With each bite, the richness of oil and the aroma of meat overflow, while the flavour of shrimp paste is exuberant yet mild. It is suggested to first taste a small bite to savour its flavour before wrapping the ribs with vegetables. The former becomes more fragrant with each chew, while the latter adds a refreshing texture, offering two different taste experiences.

金汤粗粮焗鲍鱼 Braised Abalone with golden soup茶香鸭 Tea Smoked Duck

Another highlight is the Braised Abalone with golden soup. The golden soup is made from pumpkin puree, with a hint of meaty flavour. It is prepared by simmering pork bones and chicken to make a broth, then transforming it into golden soup. In addition to abalone, coarse grains are added to the soup. The soup is delicate, while the abalone is tender and chewy, and the coarse grains are soft and glutinous, each bringing out its own unique flavour, with the sweetness and fragrance of coarse grains easily highlighted.
